  • Shredded cheese: 2 cups, divided (cheddar, pepper jack, or a Mexican blend)
  • Sour cream: 1/2 cup
  • Guacamole or sliced avocado: 1/2 cup
  • Salsa or hot sauce: to taste
  • Shredded lettuce: 2 cups (pre-shredded bag saves time)
  • Diced tomatoes: 1 cup
  • Cooking fat: 1 to 2 tablespoons avocado oil, ghee, or butter
  • Optional add-ins: diced onions, jalapeños, cilantro, lime wedges

How to Make Keto Crunchwraps

Brown and season the meat, 8 to 10 minutes

Heat a large skillet over medium-high, then add oil and ground beef. Break it up with a spatula and cook until browned with little pink left, about 6 to 8 minutes. Stir in taco seasoning and a splash of water, then simmer 2 minutes until saucy.

Prep the keto crunch, 5 minutes

For cheese crisps, place a 1/3-cup mound of shredded cheese in a nonstick skillet over medium. Let it melt and bubble until edges turn golden, then lift and cool flat on parchment. For pork rinds, crush lightly in a bag, warm in a dry skillet for 30 seconds, and press into a flat disc.

Warm the tortillas, 1 minute

Heat each low carb tortilla in a dry skillet for 10 to 15 seconds per side. Stack them on a plate and cover with a towel to keep them soft.

Assemble the layers, 3 minutes

Place a warm tortilla on a board. In the center, add 1/4 cup shredded cheese, then 1/4 of the taco meat. Top with the crisp layer, a spoon of sour cream, a spoon of guac, a little salsa, then lettuce and tomatoes. Finish with a pinch of cheese so the fold sticks.

Fold and seal, 1 minute

Fold the bottom of the tortilla up over the filling, then work around, bringing edges to the center to form a neat hexagon. Hold the last flap with your palm so it stays shut.

Cook on the skillet, 3 to 4 minutes

Heat a little oil in the skillet over medium. Place the crunchwrap seam-side down and press with a spatula. Cook 2 minutes until golden, flip, and cook 1 to 2 minutes more until the cheese melts and the exterior turns crisp.

Air fryer option, 4 to 6 minutes

Spray both sides with oil. Air fry at 375°F seam-side down for 3 minutes, flip, then air fry 1 to 3 minutes more until crisp.

  • 3/4 cup almond flour
  • 1 large egg
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 pound ground beef (80/20)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 cup shredded romaine lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/2 cup crushed pork rinds (for crunch)

Instructions
 

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, melt the mozzarella cheese in 20–30 second bursts until smooth.
  3. Stir in almond flour, egg, baking powder, and salt. Mix until a uniform dough forms.
  4. Divide dough into 4 balls. Place each between two sheets of parchment and roll into a thin 7–8 inch circle.
  5. Transfer circles to the prepared baking sheet and bake for 6–8 minutes, until set but still pliable. Set aside.
  1. Heat olive oil in a skillet over medium-high heat.
  2. Add ground beef and cook, breaking it up with a spatula, until browned and cooked through, about 6–8 minutes.
  3. Drain excess fat if needed, then stir in chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper. Cook 1–2 minutes more. Remove from heat.
  1. Lay a warm keto tortilla flat. Spoon 1/4 of the seasoned beef into the center, leaving a 2-inch border.
  2. Top beef with 1/4 cup shredded cheddar cheese.
  3. Sprinkle 2 tablespoons crushed pork rinds over the cheese for crunch.
  4. Add a dollop of sour cream (about 2 tablespoons), then top with lettuce, tomatoes, and red onion if using.
  5. Fold the edges of the tortilla up and over the filling, working around in a circle to create a sealed, hexagon-style wrap.
  1. Heat a large nonstick skillet over medium heat and add a small amount of butter.
  2. Place the crunchwrap seam-side down in the skillet. Cook 2–3 minutes per side, until golden and crisp, adding more butter as needed.
