  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup plain nonfat Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 teaspoon honey
  • 1 cup celery, finely diced
  • 1/2 cup red onion, finely diced
  • 1 cup cucumber, seeded and diced
  • 1/3 cup fresh parsley, chopped
  • 1/4 cup sliced almonds or chopped walnuts

Instructions
 

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place the chicken breasts on the baking sheet, rub with olive oil, and season with salt and black pepper.
  3. Bake for 18–22 minutes, or until the internal temperature reaches 165°F (74°C). Remove from the oven and let the chicken cool completely.
  4. Once cooled, dice or shred the chicken into bite-size pieces and place in a large mixing bowl.
  5. In a separate bowl, whisk together the Greek yogurt, mayonnaise (if using), Dijon mustard, lemon juice, honey (if using), garlic powder, and paprika until smooth.
  6. Add the celery, red onion, cucumber, and parsley to the chicken. Pour the dressing over the mixture and toss until everything is evenly coated.
  7. Fold in the sliced almonds or chopped walnuts if using. Taste and adjust seasoning with additional salt, pepper, or lemon juice as desired.
