How to Make Buffalo Chicken Bowls

Prep the base

  • Cook rice, quinoa, or cauliflower rice. Fluff it and season with a pinch of salt.
  • Squeeze in a little lime and stir in chopped cilantro if you like it fresh and bright.

Season and cook the chicken

  • Pat the chicken dry. Toss it with salt, pepper, garlic powder, onion powder, and smoked paprika.
  • Oven method: heat to 425°F. Roast on a lightly oiled sheet pan for 16 to 20 minutes, turning once, until the internal temp hits 165°F. Rest for 5 minutes, then slice or cube.
  • Skillet method: heat 1 tablespoon oil over medium-high. Cook 5 to 7 minutes per side until the temp hits 165°F, then rest and slice.
  • Air fryer method: cook at 380°F for 10 to 12 minutes, flipping at halfway, until the temp hits 165°F.
  • Grill method: grill over medium-high 6 to 8 minutes per side until the temp hits 165°F.

Make the buffalo sauce

  • Stir Frank’s with melted butter in a small bowl. Add honey if you want a touch of sweetness.
  • Keep the sauce off the heat so it stays glossy.

Toss the chicken

  • Add sliced or cubed chicken to a bowl. Pour in enough buffalo sauce to coat and toss until every piece glistens.
  • Save extra sauce for drizzling.

Prep the veggies

  • Slice celery and red onion, dice avocado, and halve tomatoes. If you use coleslaw mix, toss it with a spoon of ranch to make a quick slaw.

Assemble

  • Add warm base to bowls. Top with buffalo chicken, greens, carrots or slaw, celery, onion, tomatoes, and avocado.
  • Drizzle ranch or blue cheese dressing. Finish with blue cheese crumbles, chives or scallions, and a squeeze of lime.

Tips & Tricks

  • Cut chicken into cutlets for faster, more even cooking.
  • Mix buffalo sauce and butter while the chicken cooks to keep dinner moving.
  • Want extra crispy edges? Broil the sliced chicken on high for 1 to 2 minutes, then toss with sauce.
  • Dial the heat by swapping half the buffalo sauce with ranch for milder bowls.
  • Use rotisserie chicken and warm it in a skillet, then toss with buffalo sauce for a fast shortcut.
  • Season the rice with lime juice and a pinch of garlic powder for more flavor.
  • Keep hot and cold separate for meal prep. Add dressing right before you eat.

What to Serve with Buffalo Chicken Bowls

I love these bowls with crisp celery and carrot sticks on the side to echo the wing vibe. Add warm cornbread, garlic bread, or roasted potatoes if you want extra carbs. A simple cucumber salad or chopped salad cools the heat. For drinks, pour a light lager, an IPA, or sparkling water with lime.

Make-Ahead and Storage

  • Prep components up to 4 days ahead. Store chicken and grains together in airtight containers and keep greens and toppings separate.
  • Freeze cooked chicken and rice for up to 3 months. Thaw overnight in the fridge and add fresh veggies after reheating.
  • Reheat chicken and rice in a skillet over medium with a splash of water, or microwave in 60-second bursts until hot. Toss warm chicken with a fresh spoon of buffalo sauce and then add cool toppings for the best texture.
