  2. In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the onion, carrot, and celery and cook until softened, about 5 minutes.
  3. Stir in the garlic, cumin, chili powder, and smoked paprika and cook for 1 minute until fragrant.
  4. Add the chopped roasted poblanos and chicken broth. Bring to a simmer and cook for 10 minutes to allow flavors to blend.
  5. Use an immersion blender to partially blend the soup in the pot, leaving some texture, or carefully blend about half the soup in a countertop blender and return it to the pot.
